Instructions
- Peel and dice sweet potatoes. Drain and rinse chickpeas.
- Heat olive oil in a large saucepan. Sauté onion until translucent, then add garlic and ginger.
- Add sweet potatoes, chickpeas, diced tomatoes, and coconut milk. Stir in spices.
- Simmer for 20-25 minutes until sweet potatoes are tender. Garnish with cilantro and serve.
