Ingredients

  • 4 ounces feta cheese, crumbled

Instructions

  1. If using frozen peas, blanch them in boiling water for about 1-2 minutes until bright green and tender-crisp. Immediately transfer them to an ice bath to stop the cooking process. Drain well. If using fresh peas, lightly steam or blanch them until tender-crisp.
  2. In a large bowl, combine the prepared peas, crumbled feta cheese, and lemon zest.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the pea mixture and gently toss to coat.
  4. Stir in the chopped fresh mint. Taste and adjust seasoning as needed. Serve immediately or chill for later. This vibrant pea salad is best enjoyed fresh!
