- 1.5 lbs baby potatoes, halved or quartered

- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 cup beef broth (optional, for extra moisture)
- Fresh parsley, chopped (for garnish)
Instructions
- Prep the beef and potatoes by cutting beef into 1-inch cubes and halving potatoes. Place in slow cooker.
- Make garlic butter sauce by combining melted butter, garlic, thyme, salt, pepper, onion powder, and paprika. Pour over beef and potatoes.
- Cook on LOW for 6-7 hours or HIGH for 3-4 hours until beef is fork-tender.
