- 4 hoagie rolls
- 8 slices provolone cheese
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions
- Heat olive oil in a large skillet or on a griddle over medium-high heat. Add the sliced onions and bell peppers (if using) and sautΓ© until softened and lightly caramelized, about 8-10 minutes. Remove the vegetables from the skillet and set aside.
- Add the thinly sliced steak to the same skillet and cook, breaking it up with a spatula, until browned and cooked through. Season with salt and pepper to taste.
- Return the sautΓ©ed vegetables to the skillet with the steak and mix well. Reduce the heat to low. Arrange the provolone cheese slices over the steak and vegetable mixture, covering it as much as possible. Allow the cheese to melt completely, about 2-3 minutes.
- Using a spatula, divide the steak and cheese mixture evenly among the hoagie rolls. Scoop the mixture into the rolls, making sure each sandwich is generously filled.
