  • 2 teaspoons active dry yeast
  • 2 tablespoons caraway seeds
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons molasses
  • 2 teaspoons salt
  • 2 tablespoons vegetable oil

Instructions

  1. In a large mixing bowl, dissolve the yeast in warm water. Let it stand for 5-10 minutes until foamy.
  2. Add bread flour, rye flour, salt, caraway seeds, and vegetable oil to the yeast mixture. Mix until a shaggy dough forms.
  3. Divide the dough in half. To one half, add cocoa powder and molasses.
  4. Knead both halves separately for 5-7 minutes until smooth and elastic.
  5. Let both doughs rise in separate greased bowls for about 1-1.5 hours, or until doubled in size.
  6. Punch down both doughs. On a lightly floured surface, roll each dough into a rectangle.
  7. Place the dark dough on top of the light dough. Roll them up together like a jelly roll.
  8. Place the rolled dough into a greased 9ร—5 inch loaf pan.
  9. Preheat your oven to 350ยฐF (175ยฐC). Let the dough rise in the loaf pan for another 30 minutes.
  10. Bake for 45-50 minutes, or until the internal temperature reaches 200ยฐF (93ยฐC). If the top starts to brown too quickly, cover it loosely with foil.
  11. Let the bread cool completely before slicing.
