Foil-Pack Ravioli Dinner is a quick and flavorful meal combining cheesy ravioli and fresh vegetables all wrapped in a convenient foil pack, perfect for busy weeknights or cozy weekend dinners.

- 1 package (about 12-14 oz) fresh or frozen ravioli (cheese-filled recommended)
- 2 cups mixed fresh vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- Aluminum foil
Instructions
- Start by boiling a pot of salty water. Once boiling, gently add the ravioli, stirring to prevent sticking. Cook according to package instructions (about 4-5 minutes for fresh ravioli) until they float. Drain and let cool slightly.
- While the ravioli is cooking, wash and chop your choice of fresh vegetables such as vibrant bell peppers, zucchini, and tomatoes into bite-sized pieces.
- In a large bowl, gently mix the cooked ravioli, chopped vegetables, olive oil, Italian seasoning, salt, and pepper.
- Lay out a large piece of aluminum foil, pour the ravioli and vegetable mixture onto the center, sprinkle mozzarella on top, and fold the foil securely to create a sealed packet.
- Place the foil packets on a grill or in a preheated oven at 400°F (200°C) for about 15-20 minutes until the cheese is melted and vegetables are tender.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze the mixture before cooking, adding extra minutes to the cooking time when cooking from frozen.
