Description

Foil-Pack Ravioli Dinner is a quick and flavorful meal combining cheesy ravioli and fresh vegetables all wrapped in a convenient foil pack, perfect for busy weeknights or cozy weekend dinners.


Ingredients

  • 1 package (about 12-14 oz) fresh or frozen ravioli (cheese-filled recommended)
  • 2 cups mixed fresh vegetables (such as bell peppers, zucchini, and cherry tomatoes)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Aluminum foil

Instructions

  1. Start by boiling a pot of salty water. Once boiling, gently add the ravioli, stirring to prevent sticking. Cook according to package instructions (about 4-5 minutes for fresh ravioli) until they float. Drain and let cool slightly.
  2. While the ravioli is cooking, wash and chop your choice of fresh vegetables such as vibrant bell peppers, zucchini, and tomatoes into bite-sized pieces.
  3. In a large bowl, gently mix the cooked ravioli, chopped vegetables, olive oil, Italian seasoning, salt, and pepper.
  4. Lay out a large piece of aluminum foil, pour the ravioli and vegetable mixture onto the center, sprinkle mozzarella on top, and fold the foil securely to create a sealed packet.
  5. Place the foil packets on a grill or in a preheated oven at 400°F (200°C) for about 15-20 minutes until the cheese is melted and vegetables are tender.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze the mixture before cooking, adding extra minutes to the cooking time when cooking from frozen.
