  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika for garnish
  • Fresh chives for garnish (optional)

Instructions

  1. Place eggs in a single layer in a large saucepan and cover with cold water by about 1 inch. Bring to a rolling boil over high heat, then cover and remove from heat. Let stand for 12 minutes. Immediately transfer eggs to an ice water bath to cool completely.
  2. Once cooled, gently tap each egg on a hard surface and peel under cool running water. Slice eggs in half lengthwise and carefully remove yolks, placing them in a medium bowl. Arrange the empty egg white halves on a serving platter.
  3. Mash the egg yolks with a fork until fine. Add mayonnaise, mustard, vinegar, salt, and pepper. Mix until completely smooth and creamy.
  4. Spoon or pipe the yolk mixture into the egg white halves. Sprinkle with paprika and garnish with finely chopped chives if desired. Chill for at least 30 minutes before serving.
