Description

This adorable Easter Bunny Cake is the perfect centerpiece for your holiday feast! Made with fluffy vanilla cake layers, creamy frosting, and a playful coconut ‘fur’ coating, this whimsical dessert will delight both kids and adults. Follow our easy step-by-step instructions to create a showstopping Easter treat that’s as delicious as it is cute.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tsp vanilla extract
  • 4 cups vanilla frosting
  • 3 cups sweetened shredded coconut
  • Assorted candy for decoration (jelly beans, licorice, chocolate chips)
  • Pink food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Combine dry ingredients, then add wet ingredients and beat until smooth. Divide batter between pans and bake for 25-30 minutes until golden. Cool completely.
  2. Cut one cake round in half to create bunny ears. Place full round on serving platter as face, with halves at top for ears. Round edges with a serrated knife.
  3. Apply crumb coat of frosting, chill 15 minutes, then apply final layer. Press coconut flakes all over for ‘fur’. Use pink-tinted coconut for inner ears if desired.
  4. Decorate with candy for eyes, nose, and whiskers. Add bow tie if desired. Surround with decorative Easter eggs or coconut ‘grass’.

Notes

  • For best results, ensure all components are completely cooled before assembling
  • Make cake layers a day ahead and store wrapped at room temperature
  • Keep refrigerated until 30 minutes before serving
  • Try white sprinkles or chocolate shavings instead of coconut if preferred
