- 3 cups sweetened shredded coconut

Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Combine dry ingredients, then add wet ingredients and beat until smooth. Divide batter between pans and bake for 25-30 minutes until golden. Cool completely.
