- 4 chicken thighs or breasts, boneless and skinless
- 1 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 4 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 2 eggs, beaten
- 2 green onions, sliced for garnish
- Oil for frying
Instructions
- Marinate the chicken in soy sauce, brown sugar, garlic, and ginger for at least 30 minutes.
- Heat oil in a frying pan over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until crispy and golden brown.
- Remove the chicken and set aside, then stir-fry mixed vegetables for 3-4 minutes in the same pan.
- Add cooked rice to the pan with the vegetables and pour in the reserved marinade, stirring well.
- Push the rice to one side of the pan, scramble the beaten eggs, then mix everything together.
- Incorporate the crispy chicken back into the pan and cook together for another 2-3 minutes.
- Serve hot, garnished with green onions.
