Description

Crispy Saucy Chicken with Vegetable Fried Rice is a flavorful feast that combines perfectly crispy chicken with delicious vegetable fried rice. This dish is not only visual but also a delightful experience for your taste buds, ideal for weeknight dinners or special occasions.


Ingredients

  • 4 chicken thighs or breasts, boneless and skinless
  • 1 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 4 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 eggs, beaten
  • 2 green onions, sliced for garnish
  • Oil for frying

Instructions

  1. Marinate the chicken in soy sauce, brown sugar, garlic, and ginger for at least 30 minutes.
  2. Heat oil in a frying pan over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until crispy and golden brown.
  3. Remove the chicken and set aside, then stir-fry mixed vegetables for 3-4 minutes in the same pan.
  4. Add cooked rice to the pan with the vegetables and pour in the reserved marinade, stirring well.
  5. Push the rice to one side of the pan, scramble the beaten eggs, then mix everything together.
  6. Incorporate the crispy chicken back into the pan and cook together for another 2-3 minutes.
  7. Serve hot, garnished with green onions.
