Ingredients

  • 4 chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup jasmine rice
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat and add vegetable oil. Cook the chicken thighs, seasoned with salt and pepper, until golden brown.
  2. Pour in soy sauce and sprinkle brown sugar over chicken; cook for 5 more minutes to caramelize.
  3. In a large pot, heat more vegetable oil. Sautรฉ minced garlic and grated ginger until fragrant, then add chicken broth and bring to a simmer.
  4. Add the caramelized chicken to the broth and let it cook together for 10-15 minutes.
  5. Prepare jasmine rice according to package instructions and serve topped with the chicken and broth.
