Description

Enjoy a unique twist on traditional bread with this savory cabbage bread recipe. Perfect for sandwiches, toast, or simply enjoying on its own. Easy to make and budget-friendly!

Ingredients

  • All-purpose flour
  • Active dry yeast
  • Sugar
  • Salt
  • Warm water
  • Green cabbage
  • Onion
  • Olive oil
  • Optional: Caraway seeds for added flavor

Instructions

  1. Prepare the Cabbage: Shred the green cabbage (about 4 cups) and dice one medium onion.
  2. Sauté the Cabbage and Onion: Heat olive oil in a large skillet over medium heat. Add the shredded cabbage and diced onion. Sauté until the cabbage is softened and slightly caramelized, about 10-15 minutes. Remove from heat and let it cool slightly.
  3. Prepare the Dough: In a large bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy. In another bowl, whisk together flour and salt.
  4. Combine and Knead: Add the yeast mixture and sautéed cabbage to the flour mixture. Mix until a shaggy dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
  5. First Rise: Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for about 1-1.5 hours, or until doubled in size.
  6. Shape and Second Rise: Preheat your oven to 375°F (190°C). Punch down the dough and shape it into a loaf. Place it in a greased loaf pan. Let it rest for 15-20 minutes.
  7. Bake: Bake for 30-35 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
  8. Cool: Let the bread cool slightly before slicing and serving.

Notes

  • Don’t Overcook the Cabbage: Sauté it until softened but not mushy.
  • Ensure Yeast is Active: This will help your bread rise properly.
  • Knead Well: Proper kneading ensures a good texture.
  • Let it Rise: A good rise is crucial for a light and airy bread.
  • Variations: Add shredded cheese, herbs (thyme, rosemary), spices (garlic powder, onion powder), or seeds (sesame, poppy) for added flavor.
