Ingredients

Scale
  • 1 lb chicken breast, cut into chunks
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • Skewers (wooden or metal)
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha
  • 1 teaspoon lime juice

Instructions

  1. Prepare the chicken by cutting it into chunks and mixing it with olive oil, salt, pepper, garlic powder, and paprika in a bowl.
  2. Assemble the skewers by threading the marinated chicken onto them, alternating with vegetables if desired.
  3. Grill the skewers on medium-high heat for 8–10 minutes, turning occasionally until cooked through.
  4. While grilling, make the Bang Bang sauce by mixing mayonnaise, sweet chili sauce, Sriracha, and lime juice in a separate bowl.

Notes

  • Leftover skewers can be stored in an airtight container in the fridge for up to 3 days.
  • You can prepare the skewers ahead of time by marinating the chicken and assembling them a few hours before grilling.
